Blueberry Breakfast Cake

Ingredients
1 Cup Sugar
1/3 Cup Oil
1 Cup Freeze Dried Banana Slices
1/2 Cup Yogurt
2 Eggs
2 Cup Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Cup Freeze Dried Blueberries

Preparation
1. Beat sugar and oil in a large bowl.

2. Add bananas, yogurt, vanilla, and eggs; Blend well.

3. Add flour, baking soda, and salt; Stir until just moistened.

4. Gently stir in blueberries.

5. Pour into 3 greased and floured 6"x 3-1/2" mini loaf pan.

6. Bake for 40-50 minutes.

7. Cook 5 minutes before removing from pan.
